I got this recipe years and years ago from one of my Mom's recipe books she had from Richard Simmon's and just upped the onions, changed the beans and reduced the sour cream. I love it!
I used to make this bean dip in a 9 x 13 casserole dish, but my family right now can't eat that much. So, I have reduced it down to fit into a 11 x 7 casserole dish which is just perfect for one meal! My 7 year old daughter requests this often!
Every time we have had a get together my friend Laurie has made this time (I even request it.). So, I decided to finally recreate the recipe myself. She, of course, uses the fattening cream cheese and other high calorie ingredients, but maybe this version will tide me over. Makes about 16 servings of 4 T each.
The dressings used in this serve only to Marinade so I hope the sodium levels are actually much less.
My husband is a mexican lover and loved this recipe. It's pretty easy and is so delish!
This is a great mexican casserole that even the non-low carbers will enjoy. It's very filling and everyone always asks me to bring it. It's great topped with sour cream or homemade pico.
