A beautiful soup that is delicious and full of Vitamin A and easy--you can use spinach from a bag.
Nummy on lots of things and it gives salads some zip. I don't need as much dressing with this because it has such a strong flavor.
Mom makes this slow cooked crock pot veggie soup with beef. I made a very low key alternative that is easy enough to make over a campfire or for a college student.
This has always been my Family's favorite - and requested still for family get together's years later. This makes a family size soup pot. Add water to make 8 - 2 cup servings. Can easily be modified using healthier soups, this is all I had. You can also add more or less milk or water to make your soup thinner or creamier to your liking. Adding a baguette or roll and salad makes a great meal with this soup.
A light and warming soup. You can eat a lot of this and not feel bad about it. Covers the rainbow of vegetables.

This soup is for Phase 2 on the HCG protocol. It used cottage cheese for the protein serving.
