I tweaked this from several recipes for butternut squash soup I found.
Mixed vegetable salad base. I use this as a base for different salads. I add shredded cheese, taco meat, or chicken, turkey, etc., and dressing of your choosing. Add what you like to make it your own.
Yummy and hearty! We like to make this on a Thursday and eat on it the rest of the weekend. Filling and low in calories!! (and Weight watchers Points Plus points. 1 serving=3 points)
