I can't take credit for this wonderful recipe, it came from a friend of mine. This is a super easy, great tasting dish, cheesy, spicey, and loaded with chicken YUM! This makes so much, it's 24 servings, using 2, 9x13 pans! Great for batch cooking and freezing!
This is my favorite "go to" recipe! I got it when I was going to Weight Watchers, then I fine-tuned it to how I like it. Now it tastes just like you'd get in a restaurant! Be sure to measure the rice and chicken because it's tempting to "overdo it"!
We think this is as good as restaurant burritos! The sodium level is probably too high for those watching their salt intake but this is very filling for the calories involved!
This is the easiest recipe I've found yet for a really great tasting version of authentic Indian Butter Chicken. I like to call this an Indo-American version because my roots come from India but I was born and raised here in the states so my recipes adapt to both cultures!
