I make this for pot luck BBQs. The smokiness of the hamhock really enhances the flavor of the beans. I remove the hock and don't use the meat so the calorie/fat calculations may be a bit off.
Tastes as good as the regular Macaroni and Cheese if not better, it cuts out a lot of fat naturally. I snuck this lighter recipe on my family and they didn't notice that it was light.
This recipe is meant for a bread machine, but I'm sure it could be adapted for regular baking.
Here is a olive oil and butter spread which is easy to make and less costly than the store bought brands. I used extra virgin, but if you want more of the butter taste you can use light olive oil
This is quite tasty. I will be making it again. Very easy. Saute on low heat and covered so onions and garlic don't burn and squash steams a bit.
This is delicious for breakfast, hot or cold, and the zucchini can be switched out for peppers, mushrooms or other veggies.
