I absolutely love guacamole, and I wanted to start making it a lot cleaner. There isn't a whole lot of flavor at first, so I added in the spinach for taste and texture, and occasionally I'll add in some garlic for flavor. I usually serve it with multigrain tostitos or on chicken fajitas. Mmm.. Good!

This is a very nice and great looking dish to serve for that special meal.
It is best to use parchment paper to cook in because tomatoes and the acid from the lime will react with the foil. You can serve the parchment pockets on the plate for a fun presentation. If you don't know how to work with parchment check out U-Tube, "The Magic of Chef Paul - Using Parchment Paper". He shows a nice way to fold the paper.
This is a recipe that closely resembles the Kahlua Brownie Dessert from Famous Daves. These brownies are really rich and best served with whipped cream and ice cream - but even though they have a lot of calories - if you share one-serving between 4 or more people it's a nice treat when you have extra calories for your day.
This Ground Turkey Chili can be made in a Slow Cooker/Crockpot and the recipe can be reduced for less servings. I found making this amount works well for having leftovers for lunches, etc or can be frozen for future dinners.
This actually doesn't have "potato" in it... it just tastes like a baked potato... with the cheese and bacon on it... Heat it up and keep it in a crockpot for parties, etc...
Looks sinful, but it is de-light-ful. Some of the comments I received were that it was "fantastic" and that "it filled me up but I don't feel stuffed!." And - you can use whatever veggies you like!
