Thanks to Planet Organic Markets for this wonderful recipe! This salad is loaded with crunch. The combination of kale, carrots, cabbage and seeds makes a salad that is audibly delicious. Kale is extremely good for you, but make sure you chop it finely.

This makes a good, creamy salad dressing with a real kick. Without the peppers, this makes a great base for any very low calorie salad dressing. You will not be disapointed if you use real Greek Yogurt; there is no substitute. The amount of Chipotle pepper I add to this gives it a very substantial kick. I like it this way, you may want to experiment with less at first. I use the same base for a creamy caesar dressing for my wife, leaving out the chipotle pepper and adding more garlic and 2 tsp of Worcester sauce. It's great fresh, but even better after it sits in the fridge a day or so letting the flavors meld.

If you can’t find chicken tenderloins, look for thin cutlets, which work just as well.
Whole wheat pasta, fresh vegetables, bright lemon and zippy Italian dressing make this a yummy light dinner or side dish at a potluck!

Any beans will be approximately the same caloric value. Add as many fresh veggies is you like - it will lower the total caloric value and increases the number of servings. Any combo of sweetener and vinegar works.
