I got a fennel bulb in a delivery of organic produce. So, I had to figure out what to do with it. Since I don't choose what goes into my delivery, I often get to try new things.
Taken from America's Test Kitchen. I halved the recipe but added the full amount of romaine. This is absolutely delicious, especially when eaten with pita bread and hummus.

this is a recipe I found in Sparkpeople but I didn't need the salad only the dressing. It's a quick, easy, lo-sodium recipe that makes a fantastic mexican cuisine night. I like versatility of the recipe. You can change one ingredient and the flavor is totally different.
