One of my favorite salads of all time and one of the most popular on the blog www.ohsheglows.com. It has so many amazing flavors and textures and it is high in protein and fiber too.
This is my take on the oatmeal cookie recipe you find on the inside of the container of oatmeal. These substitutions can be made in most any cookie recipe to lower the fat and make them vegan-friendly. I replaced butter with canola oil and the eggs with unsweetened applesauce, replaced a portion of the all-purpose flour with whole-wheat, and added dark chocolate chips to the mix to conquer my chocolate cravings. I've been looking for something to keep with me for when I've let myself get busy and forgotten to eat. As I was looking through recipes for granola bars, nearly all of them had problems. Some had too much chocolate and would melt in this Florida heat. Some had too much sugar or added fats. Some were just plain boring! So I improvised a few things and this is what I came up with. The applesauce really binds the bars together well if it's done right! These are not low calorie, but as I struggle to eat enough calories, my main concern here was making sure to include as many nutrients as possible.
Stash these wherever you think you might need them: in your gym bag, kids lunches or sports/dance bag, in the car, before heading to the beach or on a long walk... very handy and way better for your body than all the preservatives and processed junk in commercial granola bars. Give yourself something tasty and nutritious for your new lifestyle.
Whole fruit blended into sorbet. Try Banana and Mango together top with toasted coconut. Or Do this recipe with just Mango. Use any berry you like. Or mix them up. Plain Banana with PB powder is healthy & delicious as well. Top with chocolate syrup &/or chopped walnuts.
Yummy roasted carrots with great flavor and lots of vitamins. VERY easy to make.

This is a creamy coconut milk based treat that is sugar-free, yet plenty-sweet. I always have a can or two of coconut milk in the fridge, that way if I need to make a quick ice cream or whipped cream I don’t have to wait for the milk to chill. If you’re making this ice cream with room temperature coconut milk, the ice cream mixture will probably need to chill in the fridge for a couple of hours instead of just one.
I was craving green - so I tossed some fruits in the blender with a little orange juice and soy milk and a cup of fresh spinach and WOW! I definitely got my fix. :)
Modified from "Practical Vegetarian Cookery." Their insane recipe asks for 1 1/4 cups of olive oil. I found 1/2 tbsp. to be sufficient.

This is a great dish for a cook out, picnic, potluck or as a side dish for dinner I make it in large batches because it goes very fast
This recipe is from the AWESOME cookbook, La Dolce Vegan. It's AWESOME with a HUGE side salad and some Tofutti Better Than Sour Cream!! To reduce the heat, reduce the amount of peppers you put in.
A delicious recipe that was published in the May 2008 Vegetarian Times. I just can't keep this recipe to myself. A word of caution- This is not a low fat meal.

This is an awesome meatless loaf that you can make at home. It tastes great and even your carnivorous friends will enjoy the taste of it.
