This is a fresh salad for those of us that aren't big fans of lettuce. The cottage cheese acts as a dressing with protien as well.
This is a pure white frosting, ideal for wedding cakes. You can double the recipe if you have a sturdy mixer. Best for piping, if you are using it as a frosting base thin it out with milk. Makes 3 cups, NI per cup.
Kick-start your taste buds with these tangy lime cheesecakes layered into cupcake papers.
Alright, so I really don't know if this is a parfait or not but I call it that, I love it a lot so maybe you will too.

This is a delicious and healthy recipe originally from Prevention Magazine. It is high in fiber and potassium, and low in fat. VERY NUTRITIOUS.
The barley for this recipe is hard to find for first timers. Just go to the grains section and look on the top or bottom shelf. It is in a white/yellow box with the Quaker man on it. Make sure you get the "quick" barley. It is worth it.
I find this a really filling meal, the goat cheese I use has a bit less fat then the one in the recipe. You can substitute a Low Fat Goat Cheese if you want to bring down the fat content more.
Also, you can substitute fresh beets, I use the canned kind when I don't feel like peeling beets.
You can also add potatoes, zucchini, carrots, or any of your other favourite veggies!
This colorful salad is a slightly changed recipe I got from Epicurious.com. It's great for potlucks or outdoor eating. You can significantly lower the fat and calories by leaving out the nuts and the recipe is still quite good, but the nuts add an extra layer of texture that's really nice.
To save time, I shred the cabbage and slice the apples with my food processor. You can also make the spiced nuts and dressing a day ahead - store the nuts airtight at room temp. Cover and chill the dressing; bring to room temp and rewhisk before using.
Just had this at my family reunion and it was awesome! Very fresh tasting and I loved it! And I don't even like black-eyed peas!
