I tried this recipe after discovering a similar dish at a chain steakhouse.
Overripe melon is perfect for this recipe! When it's too mushy to be enjoyed properly, this is one way to save it. My local produce place had it for $1 per quart (already peeled and diced), so I had to get some.
Vodka Sauce with Diced Tomatoes. Great if you need to stretch a single jar of Vodka Sauce & also want to reduce the calories of straight Vodka Sauce. Service with Spaghetti Squash or Whole Wheat Pasta.
Ran into a similar recipe on a cooking website but made changes to accomodate what I had on hand and I fell in love. This dish is so filling and delicious, yet the lemon lime vinaigrette makes it so fresh and light as well. Yum!

This is a wonderful side dish for any cookout or social gathering.
This is an old family recipe. To make it completely vegetarian you can replace the beef bouillon with vegetable bouillon. The corn flakes can be replaced with Special K Cereal too - we just usually had corn flakes on hand.
Delicately seasoned with basil and lemon rind, this frittata spotlights the contrasting flavors of asparagus, green onions, and grape tomatoes. Wild rice brings an earthy nuttiness and makes this dish a light meal in itself. Experiment with whatever produce is in season or is your preference--fresh peas and mint, for example.
Really great side that is easy and combines both the starch and the veggie. Kind of spicy, though.
