This is a recipe from my vegetarian slow cooker cookbook.
I love using my crockpot whenever possible, especially in the summertime!
I omitted the beans (15oz) and the black olives (2 T) because some members of my family are allergic to them. The cooking time IS factored in for the slow cooker.
It doesn't have to be summer for you to enjoy this light and delicious pasta dish!
These are very soft and yummy muffins that just happen to be wonderfully healthy. When cranberries are in season, you can use fresh, but I use frozen ones during the rest of the year. Also, I find oat bran in the bulk bins at my grocery store, but wheat bran or even all whole wheat flour/oat flour should work. You could probably alter these and make blueberry banana or apple ones as well! I'd recommend using a good nonstick or silicone muffin pan for these; they stuck to my paper muffin wrappers a lot when we went to eat them, but everyone was trying to lick the paper clean nevertheless!

A recipe I tinkered with and edited to my own tastes. It's full of vitamins and protien, good for any vegetiarian. You can serve it with rice, sour cream, or plain yogurt.
This starts as 16 cups of veggies in the pot - so split it into 8 servings and they net 2 cups of veggies each!
