Red Chicken Enchiladas Recipes

I usually make this with all Trader Joe's ingredients - including TJ's Red Enchilda sauce. Serve with a side of black beans, chopped romaine lettuce for a yummy weeknight meal.

Basic Chicken and Cheese Enchiladas with Red Sauce. Precooked/shredded and seasoned chicken. You could reduce the sodium by using fresh chicken and altering the seasonings and/or salsa

Preheat oven to 350 degrees.

This is based on an old weight watchers recipe that forgoes the typical sour cream/cream cheese etc., but instead uses an unusual red sauce. My family really loves it. We serve it topped with plain yogurt and sliced jalapenos.

Wanted to make a healthy enchilada that campared to the enchiladas I have made for years and this recipe surpassed my original recipe.
