I've been tweaking this recipe for over a year now, trying to trim the sodium. The original calls for canned beans & corn, I use cooked from dried and lower sodium canned tomato products, plus homemade taco seasoning which makes all the difference! Enjoy!

Easy slow cooker meal

In the slow cooker or on the stove, easy, fast & healthy. I use my own concoction of Taco Seasoning or the low sodium packets if I am feeling uber lazy about mixing my own.. This is one meal that never leaves me feeling deprived.

Serve with a sprinkle of shredded cheese or some crunchy tortilla chips. A real husband pleaser.

Yummy and hearty! We like to make this on a Thursday and eat on it the rest of the weekend. Filling and low in calories!! (and Weight watchers Points Plus points. 1 serving=3 points)
