Preheat oven to 350 (I used a toaster oven). Mix honey, sugar, earth balance/butter, peanut butter, H2O, and vanilla in medium bowl until smooth/creamy.
Mix flours (not sifted) and baking soda, blend into above mixture.
Blend in chocolate chips.
Use teaspoons to drop preferred size cookie on sprayed (used canola oil spray from Trader Joe’s) sheet/pan.
Bake for 7-10 minutes.
Cool on parchment paper before tasting this yummy delight.
Yield: depends on cookie size, if bite sized; 6 dozen

Homemade Granola. Is there anything better? I make mine with organic oats and cranberries. Could take it even further by using organic brown sugar too, but I didn't go that far. :-) Delicious served with milk for breakfast but I love it with yogurt for lunch.
