I used a small venison roast, which has less fat and calories than beef, but most folks won't have a freezer stocked with deer meat. The crock pot makes this easy and it smells and tastes great! I wouldn't have thought that the turnips and squash would be a good combination, but my DH suggested it, and it was very good!
This is among my many spanish favorites for its' flavor, simplicity, and minimal ingredients. If you have a pressure cooker handy, it'll cook in less than 20 minutes, give or take depending on desired consistency. It goes perfectly with rice or simply vegetables, if you choose. Either way, it will be one of your favorites also.
I tried this at trader joe's once and was impressed! It is very good. For my diet it is high in calories but I will have a square for a "cheat meal." It satifies the craving for chili and cornbread without going over the top. You can take only 1/2 cup of cheese for lesser fat and calories. This is perfect for a cold day! If anybody figures out how to make a lighter version of this- please let me know!

Add 3 tbsp of grated ginger and scallions for added flavor
This original recipe came from Inger, but i added pork roast and tweaked it for my slow cooker. YUM.
i added some healthfully made smashed potatoes, and it makes SUCH a great winter meal !!
