Mango salsa is a light summery addition to grilled pork. A tasty, easy way to get a little more fruit in your family's meal!
I had left over taco meat along with refried beans, tortillas, diced tomatoes, green onion, salsa and cheese and wanted to make something interesting with the left overs.
If you don't have left over seasoned ground beef, then you will need to make it before starting this recipe.
When my family asks for meatloaf, this is the recipe they expect me to use. If I don't, they are disappointed. Always good!
Simple and delicious. I was in need of a good pork loin recipe and this was what my friend gave me.
Excellent Aromatic Burgers with a Cheesy Surprise! Use some large lettuce leaves and you won't miss a bun.
6 Points. Chili is easy party food. Just leave the pot on the stove over low heat (or in a slow cooker) and offer a variety of toppings on the side: chopped scallions, low-fat shredded cheddar and reduced-calorie sour cream.*
Another wonderful recipe from Eating Well Magazine. Tastes much richer and more filling than the calorie count indicates. Mmmmm...
A wonderful and hearty casserole. Serve with roasted asparagus or brussels sprouts and pineapple slices.
An easy, healthy, and frugal way to prepare taco meat. Dry beans add fiber, take out the fat, and lower the cost! No prep, just throw everything in the morning and have the start of a great meal ready by supper time!
A bit healthier than the original version. Alter ingredients to your taste, but this version topped w/just a bit of salsa was muy delicioso :)
This dish is great served over pasta, rice or couscous! Our family LOVES it!
Have you ever had that wonderful white trash taco salad made with Doritos, taco meat, tons of cheese and an entire bottle of Catalina/French dressing? Oh yeah, I believe there may be some lettuce in there also. I personally love the stuff but DON’T love the calorie count (I calculated it at over 1,000 calories per serving!!). I prefer to splurge on dessert and tend to choose healthier options for my meals.
Well, I don’t see why I can’t have my cake and eat it too, so I took that atrocity of a “salad” and turned it into something I could feel good about eating on what is now almost a weekly basis. It has become one of my favorite go-to meals b/c it’s easy and so tasty. Plus, I like big portion sizes and the bulk of the lettuce allows you to get a big plateful for about half the fat and calories of the original recipe. Now that’s what I’m talkin' 'bout.
This is another of the dishes I make when my husband is away. I usually half it, but it freezes well, too.
