I love this. I use a curry powder that's a bit spicy, but you could find one with out so much kick if you prefer. Or you could used regular diced tomatoes instead of the ones with green chilies. I've never tried this recipe with lite coconut milk, if you're particularly health conscious, you might try that. Or, if you don't like chicken, I recommend substituting a can of chick peas. And, try adding other veggies! Cauliflower and potatoes are two that I think I'll try next time. I break up a warmed flour tortilla into pieces and scatter them in a modest bowl full of this spinach curry. Tortillas are easier to come by than naan around here, and they taste the same to me. Whatever's left after the tortilla is gone gets eaten by the spoonful.

If you love Applebee's Wonton Taco's and want to make them at home and trim some fat off the stats here's your answer. Using olive oil and baking the wonton's instead of frying them, using boneless skinless chicken breasts instead of dark meat and using low calorie dressings make this a great imitation that you can feel good about.
Not the tastiest breakfast option but great if you're looking for something low fat and filling. The fiber and flax seed are also great for getting you going in the morning!
