This makes a good, creamy salad dressing with a real kick. Without the peppers, this makes a great base for any very low calorie salad dressing. You will not be disapointed if you use real Greek Yogurt; there is no substitute. The amount of Chipotle pepper I add to this gives it a very substantial kick. I like it this way, you may want to experiment with less at first. I use the same base for a creamy caesar dressing for my wife, leaving out the chipotle pepper and adding more garlic and 2 tsp of Worcester sauce. It's great fresh, but even better after it sits in the fridge a day or so letting the flavors meld.
I listed this as making 4 servings, but it is so lite and low in everything you can indulge yourself. I encourage you to have fun with this recipe and let me know of any other variences you come up with. mailbox@tmaine.com
This is a very adaptable base bread made from coconut flour for those of us who are avoiding wheat, standard flour, or gluten. To adapt simply add ingredients that you would to any other bread recipe. For example, to make sweet add cinnamon and raisins, or dried cranberries. To make savory add garlic and spinach, maybe pistachios. This recipe and its variations are limited only by your creativity and daring.
Delicious muffins that are great to take to a potluck or have in the house for breakfast. The hard part is eating just a few, so make sure you have other people around! This is slightly modified from thepioneerwomancooks.com (no brown sugar/OJ glaze and plus cranberries).
