I tweaked the original recipe that was written by Raw on $10 or Less to cut the fat calories down. Soup was still nice and creamy.
This yummy soup fills you up for a lot of nutrition and very few calories. And it happens to be perfect for the zone diet. You can make a huge batch and eat it for days, or freeze in portioned containers.
This is a converted recipe from a place I used to eat at as a kid called the Barn. It was in Wooster Ohio. We only ate there when visiting my grandmother who lived about an hour away. A waitress there begrudgingly gave my mom the recipe but it wasn't correct. So...this is my version.
This tortellini soup has a slight curry flavor. It is a quick meal and is prepared all in one pot. It's a family favorite and gets the cook in and out of the kitchen in less than 30 minutes.
So, I have to use up my okra, but don't have time to stand over a pot. Here is a slow-cooker version of gumbo. I didn't have any celery, so I put zucchini in instead.
This is set up for dried beans. To use canned beans use 3.5 cups of kidney beans and 3.5 cups garbanzo beans.
I only need to feed me and my husband, so I end up with days worth of left overs. My favorite thing to do with the left overs is to put them in an ovenproof dish and directly cover with cornbread dough, then bake according to the box.
