I love black beans, and I threw this together in a minute in my food chopper. It's just one can of black beans with a few spices added in, then ground up. I put it on Triscuit crackers and it's wonderful!
This can also be used to make "black bean pizza" when put on whole wheat bagels or bread or rolls, topped with cheddar cheese and baked until cheese melts.
A great dish for a brunch, or make it for a family dinner. You can cut servings and freeze them!

A word of warning- don't skimp on the olive oil. I know it's tempting, but it's a healthy fat and it's absolutely necessary to prevent sticking and to get the correct flavor in the first steps of the recipe.
This is a healthy and filling dish which can be eaten for lunch or dinner. Also can be made in big batches since it tastes good next day too.

Growing up in Texas I always loved enchiladas. When I moved away I found that the enchiladas were different. Some places even put tomato sauce over them :-|.
