I love smoothies, any time of year... this smoothie takes advantage of the new Dole frozen mixed fruit at my grocer, which I add to whatever fresh fruit I have at home, today, mango and strawberries... Pineapple juices is added for a zing of tropical flavor.. this recipe makes 2 servings, and tastes just as good without the yogurt!

Easy to make: mix 2 cans of light tuna (drained) and mayo, with salt and dried oregano, and enjoy on a whole grain toasted bread or on a salad leaf. I add 15 or so pine nuts. Top with your favorite veggie. I love marinated beets or cucumber.

This was on the SP calandar. Instead of putting thme in a muffin tin I just baked in a 8x8 dish and cut it into 9 servings.
Mix dry ingredients. Whisk milk, egg, molasses and melted butter. Add to dry ingredients. Mix. Drop on heated non-stick pan with 1/4 cup.
