This is a five-star-rated pumpkin loaf recipe that I modified to be only "half a cheat" by cutting the fat and sugar in half and using half whole wheat flour. It is still very sweet; the sugar could be reduced even more. My family cannot tell that this is a healthier version of the recipe. Makes 2 large loafs.
Carrot cake what??? Yes, carrot cake porridge! And it's absolutely delicious. So delicious that I don't restrict this to breakfast - I like to have it as an afternoon treat on a rainy weekend :)
There's something really satisfying about getting a portion of vegetables into your breakfast! But don't worry, this doesn't taste like it has veg in it - think yummy carrot cake but warm and soft.

This is a wonderful, special french toast. It has lots of fruit. The nuts add to the protein giving you about 7 grams per serving and one toast is plenty to satisfy that sweet tooth with healthy nutrition to get the morning off and running.

By substituting apple sauce with oil, and egg whites for eggs, cuts 70 calories from these yummy muffins. Add one banana for a little healthier twist, and you get 16 muffins (four more than what the box states!) AND much lower calories!
