This is a great recipe with or without feta cheese (my family perfers no feta 'cos feta can be stinky when it cooks) - fast to prep, I like it served with a mango chutney or salsa topper. (not included in the nutrition of this recipe) and served with brocoli salad
BBQ sauce for sodium restricted diets. This is a small volume recipe since I'm the only person in my house on this diet.
Excellent side dish for steaks...the sauce is as good as any bottled steak sauce I have had.

Not a low sodium meal.
Boil the potatoes (with skins on) and the eggs until done. While the potatoes and eggs are cooking you can dice up the celery and onion into a fairly large bowl. Let the potatoes and eggs cool, then dice them up as well into the same bowl with the celery and onions. You can leave the skins on the potato if you like. Once everything is chopped you can mix it up with a 1/2 cup of miracle whip and a 1/2 cup of light mayo. Mix everything together and salt and pepper to taste. Lastly, add the vinegar and stir thoroughly and refrigerate until cool. I like mine very tangy so I put more vinegar depending on taste.
Before you start: This recipe needs the night to marinate.

The sodium is still out of hand in this recipe but I tried to make everything as raw and healthy as possible other than that.
The Birch Sugar or Xylitol in this recipe is a sugar substitute. It works 1:1 ratio as sugar and is safe for people but not for doggies (like chocolate).

This is a simplified version of a French-style potato salad. You can play around with the dressing to make it a little tangier by adding more vinegar. Try out different spices! Others you might like: tarragon, dill, or even mint.
