The husband requested pasta for dinner, this is what I came up with!
I say "meaty" because the buckwheat and lentils help to bulk up this dish!

This is one of those "Gosh, we're broke. What can we make out of what we've got that the kids will actually eat?" Voila! Serve with fancy sauce/Russian dressing, and it's a meal.
Mind you, each serving probably contains about 1 tbsp of oil, but you will need more like 4 cups total in order to deep fry. You can bake them instead if you want to, and eliminate the oil altogether. I imagine they'd be almost as tasty. They're really filling, either way.

Had eggplant. Wanted to try to recreate kind of a sesame chicken but with eggplant. This is what came of it, and it's MIGHTY tasty. The sesame paste and almond butter is to add protein. Under 500 calories per serving
A very nice tomato sauce from a TV news personality. Makes enough to freeze a bunch. Cook it for the full 4 hours if you can!
This is a super tasty, very low calorie alternative to traditional vegetarian curry. It maintains its low calories by replacing the high fat based sauce with one based on cottage cheese and vegetable sauce.
This is an incredibly basic chicken breast recipe but it comes out pretty consistently tasty and is really easy to make.
This is a nice, rib sticking, Chicken and Squash stir fry. It makes the same large portions you are used to finding in my recipes, however, this main dish has a slightly higher per serving calorie range than normal at 314. This is fridge stable for roughly a week, and is great to come home to on those days where you do a long hike and come home famished.
