This is absolutely one of my favorite meatloaf recipes. It is a great crock-pot recipe, but can easily be made on the fly and put in the oven. If using a crockpot, it works best in an oval pot (not the circle pot style) to maximize the juices. I have shared this with all my family members & every one of them loves it too - even my super picky eater of a nephew! You can use green peppers instead of red, I've used both. I recommend using a food processor/chopper to cut up peppers & onion to get very fine.
An easy-to-make filling for pasta (such as ravioli, manicotti, or lasagna). This will stuff 16 small (2" square) ravioli or 8 large stuffed shells at 1 tbsp per ravioli. Make more for lasagna or other stuffed pasta.
You can reduce the fat even more by omiting the margarine and using water instead however the margarine gives the crust a nice texture and colour
A basic tomato sauce. I find the combination of Italian-style stewed tomatoes and fire-roasted tomatoes as the base gives a nice flavor to it. With a couple of additions or subtractions you can turn it into a meat sauce or a pizza sauce.

Classic recipe with an italian twist. For variations, you can poach the egg or use different cheeses for the topping (italian cheese blend, romano, or parmigiano reggiano are all good choices)! You can even add some bacon crumbles, sliced smoked turkey sausage, or prosciutto for more protein.
Fruit or whole wheat toast are great side items to this dish.
