This is a recipe I got from a friend and then toned it down some. She used a LOT more butter and definitely no fat-free or light items.
Here in Alaska, we find our chest freezer bursting with halibut and salmon. This is my favorite way to eat my halibut. The sauce is great as a dip as well. Especially yummy with bell peppers.

Growing up in Texas I always loved enchiladas. When I moved away I found that the enchiladas were different. Some places even put tomato sauce over them :-|. I read about people taking fish and covering it with salsa and then throwing it in the oven. It sounded really tasty minus the fish, so I thought this simple dish up.

Tempeh is a fermented soybean cake, originating from Indonesia. You can find it at your health food store, if you can't find it at your regular grocery store. We aren't vegetarians, but sometimes it's nice to have a vegetarian meal. Helps save on the calories. Tempeh is a great meat substitute. If you chop it up right, it can have a similar consistency to ground meat.
Also, I'm pretty sure the tortillas Taco Bell uses for this are deep fried to make them crispy. I baked mine.
