These were delicious! I served them on warm whole wheat tortillas - about 200 calories for the whole meal, and soooo good.

This chile is simple, tasty and great on top of just about anything. I love to have a bowl of it with an eggs on top. makes for a great burrito with scrambled eggs, roasted potatoes, maybe some onions. Just let your imagination run wild.

I came up with this recipe when I went to a Mexican restaurant and my kids ate almost nothing of their meals. This has so much flavor, it's easy to be healthy and still have great taste! My kids' friends LOVE it!

I used to have seven or eight layers to this dip when I first started making it, but not everyone likes salsa and guacamole. So, it's now down to six, but still delicious. It's best made with Rosarita refried beans, but I can't seem to find them many places. This makes 9 servings and I put it in a 9 x 13 x 2 casserole dish.
