This is a quick, easy side dish, good for a little variety.
I lived on this in college. It's good scrambled with eggs and chili powder for breakfast, too.
This dish should be served with phulkas or rice. It can also be eaten as a sandwich filler or salad.

2 Notes -
1) I left out the shredded cheese from the original recipe since I used broccoli with cheese sauce
2) Nutritional info is slightly off because you do not use 1 whole potato, only 2/3 of a potato.

Great way to change up your boring potato! A very tasty addition to any meal.
3 cups fat-free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
One 15-oz. can pure pumpkin
10 oz. cooked boneless skinless lean chicken breast, chopped or shredded
1 cup frozen white (or yellow) corn
Optional: dash hot sauce, or more to taste
Optional toppings: shredded fat-free cheddar cheese, crushed baked tortilla chips
I LOVE this recipe. It is light and healthy. I use wild salmon for it, but feel free to use whatever salmon you want. :)
You can probably make this recipe with any meat, I just happen to have chicken more often than not. I made this up off the top of my head, so feel free to tweak!
