This is a lower sodium and cheaper alternative to canned condensed cream soups for casseroles.
Recipe may be varied by using vegetable broth, celery seed, or sauteed celery or mushrooms. Adjust values accordingly.
I was playing around with ingredients tonight and came up with this one. I love a good fresh vegetable soup and wanted some extra protein in there without adding meat, so I threw in some beans. I think it has just the right amount of flavor, but is mild enough to allow you to really taste and appreciate all the wonderful fresh vegetables.

We love Carrabba's sausage lentil soup, so I found several on-line that were similar to it and came up with this version myself.
When the produce drawer is left with just midgesof leftovers veggies, new elbows and tuna give stuff you've been looking at for a week, a whole new taste. Enjoy a full 1/2 cup serving with crackers or up it to a cup with carrots for a full meal.
Sweet orange and sour vinegar make for a refreshing dressing that is good for fruit or green salads.
