A lovely fruity cake that is so low in fat - give it a try and see !
My grandmother taught me this simple, but yummy recipe. She used yellow mustard and a tsp of sugar. I eliminate the sugar by using the sweeter honey mustard.
At only 133 calories a slice, how can you go wrong. I love this recipe and its great on salads, snack or in a meal of its own.
Whole wheat pasta, fresh vegetables, bright lemon and zippy Italian dressing make this a yummy light dinner or side dish at a potluck!
Serves 6 as a side dish or 4 as a main.
Thicken the yogurt by draining the whey from it ( about 5+ hours) through a coffee filter.
Grate cucumber and sprinkle with salt. Let the cucumber rest for 30 min. in a sieve over a sink or bowl to drain moisture from it. Pat dry with paper towels.
Mix the onion, minced garlic, dill, cucumber, salt, pepper & lemon juice into the yogurt.
Great as a dip or as a sandwich spread.

I am not creative to find a better name.I found this amazing roasted eggplant dip /Baba Ganoush in my local Costco and since then I have made this sandwich many time.If you can suggest a better name,please feel free to let me know.
Any beans will be approximately the same caloric value. Add as many fresh veggies is you like - it will lower the total caloric value and increases the number of servings. Any combo of sweetener and vinegar works.
