I was looking for a replacement for candy bars and found it! Be careful because they are delicious but high in calories from all the nuts.
Low fat, high fiber, non dairy, low salt Muffins. Salt can be omitted. 1/14 c of skim milk can be substituted for the soy milk and any berry may be used(I have tried cranberries, raisins and blueberries all good). Next time I'm going to try molasses inplace of honey for an added kick.
I make these using a mini cupcake pan or you put them on a cookie sheet and shape them into bars. I usually get 10-12 balls out of this recipe. No baking - just throw them in the fridge overnight! My 2 yo loves them!!! Nice healthy alternative to store bought cookies! They are so good that you might feel guilty eating them but don't!

These are breakfast muffins that I make for my children. I can not get them to eat oatmeal so it’s a convenient way to sneak in a well rounded breakfast. These can be easily made without the chocolate chips, but I add them so my miniature food critics think they are getting away with something at breakfast. I specify local honey in the ingredient list because the honey in stores is often times not pure honey. Honey is often blended with other sugars for profit. Your local honey also helps those suffering from allergies. It also tastes much better!
This is from the Biggest Loser Cookbook. It has 1 Weight Watcher point per serving. (Makes 2 servings). It's pretty good. Sometimes we omit the garlic powder and use black pepper ,lite salt, or cinnamon instead.

These came out really, really good. Instead of the raisins I would sub in a dried fruit medley - cranberries, raisins, cherries. Next time I make these I will add in walnuts.
