All natural ingredients, great as an appetizer, side, snack, or dessert! The taste & texture is fun and different.
Quiche just got more healthful with this easy recipe that uses tortillas for the crust and lower-fat products in place of tranditional ingredients.
I made these for a lenten Friday meal and they were absolutely wonderful. The extras can be frozen in quart size freezer bags (3 will fit in a bag) and heated in the microwave at for about a minute to a minute and a half. You can add chicken or pork or any other left over meat to the mix as well!
This recipe is adapted from one I saw on the Kalyn's Kitchen blog (www.kalynskitchen.blogspot.com). To easily reduce fat content, reduce the amount of peanuts and dress lightly.
This is one of my favorite "OMG I have only 15 minutes!" meals. It's super creamy and delicious, and prep time in no time! I use a magic bullet for this as it's microwave friendly, but you could use a food processor or blender if necessary. Obviously, you could use fresh vegetables for better nutrition-- which would up the prep time, go to a low sodium pasta sauce (but I LOVE my salt), or cut out the parm cheese to cut out calories, but the parm really fills out the flavor and my goal is to make something healthy, fast, and really really delicious. NOTE: This is the sauce only, with veggies. I use it with spaghetti squash, but it's also great over scrambled eggs, barilla plus pasta, brown rice, or any thing else. It makes A LOT of veggie saucy goodness-- you could easily split this into two servings, but with the low calories, you can afford to splurge!
This salsa/salad/dip is a unique blend of ingredients that defy categorization. Not Mexican, not Greek, but an outstanding combination. I served this for the first time at a party and it was an immediate hit and gone in minutes!
An excellent vegetarian lasagna, my family loves it. I make it in a 9" square pan and cut it into 9 generous servings. I like to use the no-boil lasagna noodles because they are shorter and fit my pan better, but you can use regular noodles and break them to the right shape. You may want to add extra sauce to help the noodles cook if you do that. You can use just zucchini or mix zucchini, yellow squash and add in some bell peppers for a more colorful lasagna.
A nice start to the morning or a satisfying dessert. A good way to hide some healthy vegetables! Add some protein powder for an additional protein boost.
Wok-cooked vegetarian pasta dish, suitable as entree (or optionally as a side dish)
This is the basic Tofurkey Roast and Vegetables recipie on the back of the box. Most people probably have smaller servings but I am in love with Tofurkey - its the time of the year we are finally equal at Christmas Dinner.
