Quick and filling with antioxidants and monounsaturated fats. It's also delightfully purple and cheerful!
This is a deliciously rich tasting dish that I came up with because it combines two of my favorite flavors, roasted red peppers and gouda.
I threw this together when I needed to use up some leftover brown rice. It was really good, and loaded with veggies and protein.
I tweaked the original recipe that was written by Raw on $10 or Less to cut the fat calories down. Soup was still nice and creamy.
if you like spicy peanut buttery asian food, you'll like this sandwich.
note: i use LIGHT firm tofu in place of regular firm tofu because it's significantly lower in fat and calories without being lower in protein. it doesn't really taste any different.
If you like something to eat at breakfast that lasts until lunch this is for you!
Serve with grated cheese, lettuce and either taco shells or burrito tortillas for a hearty meal. (Nutritional value of such extras not included in calculation)

Mozzarella Cheese, part skim milk, 162 grams
*Sorrento Part-Skim Ricotta Cheese, 15 oz container
*Eggland's Best Large Egg, 1 serving
*Kraft grated parmesean cheese, 1/2 cup
Garlic powder, 1 tsp
*McCormick Italian Seasoning, 0.25 tsp
*Prego 100% Natural Italian Sauce - Traditional 1 jar
Butter, salted, 1 pat (1" sq, 1/3" high)
Basil, .5 tsp
Oregano, ground, .5 tsp

As vegetarians, we are always trying to be creative with fun ingredients and different alternatives to the standard boring fare. We make a LOT of different veggie and bean burgers, mostly because I use it as an excuse to feed my ketchup addiction. :) But this burger takes the cake. The best part is that you can interchange ingredients as you please – substitute any type of bean or seed, and you’ll still get the same result – just a slightly different flavor!
