I plant basil every year just so I can make pesto and have enough to freeze it (3 plants is all it takes). The hardest part is washing the basi leaves. Once made, I quickly put it into snack size plastic bags. The only thing about pesto is that it turns brown when exposed to air, so close the bags quickly and keep the remaining pesto covered with plastic wrap while filling the bags.
This can be cooked on the stove or in a crock pot. It's delicious served over brown rice or basmati rice.
Very good as a dip on its own. Adding a 1/4 to a 1/2 of tomato to the mix may be good as well. Cilantro may also be a good herb to try instead of the sage, or be daring and try both!
ate these in Puerto Rico on our honeymoon almost every day they were so delicious. I keep trying to find the right recipe to duplicate them... this looks like it will be close!
Amazing, plain and simple. In this recipe beef is replaced with protein rich, low fat seitan (wheat gluten) and sour cream is replaced with tangy soy yogurt. Vegan, fish-free Worcestershire and a good red wine vinegar add richness of flavor. Serve over whole wheat pasta.
This is my adaptation of the Hungry Girl Falafel - I had way too many garbanzo beans, didn't have any cooking spray, and didn't feel like measuring!!! ;) It still tastes good!

I borrowed this recipe from myrecipes.com and made a couple of minor changes. It's fantastic!! And, it's even better as leftovers the next day.
So I made this one morning for breakfast and I loved it so much that I had to post it as a recipe for others to try. It is relatively healthy but is not so low in calories... but it's not super high either.
