Adapted from Vegan Italiano, craisins instead of raisins
This is a wonderful and versatile recipe. Be as creative as you want to be.
Low-fat cheese can be both creamy and bubbly—that's why it's so perfect for healthy cooking. This low-fat version of béchamel, a base sauce, can go in a thousand different directions. It uses Parmesan cheese, but you can use Cheddar to make mac and cheese, or Monterey Jack to make a Tex-Mex sauce.
I combined two recipes - one for roasted radicchio with one for an orzo salad with raw radicchio. I find raw radicchio to be too bitter, so I roasted it first to bring out the sweetness and make sure it was cooked through. I cook approximately, so am eyeballing the measurements I give here - you may need to add more olive oil if the measured recipe comes out too dry.

Good made with goat cheese also. My family prefers feta.
Delicious side dish in the summer, or perfect on a crisp fall day. Great accompaniment to steak, kabobs, chicken or fish dishes.
