OLD FAMILY RECIPE, THE BEST I HAVE EVER TASTED.

From the blog "The edible perspective"... it's a filling nutritious breakfast.. and was highly recommended to me.. I haven't tried it yet (confession) but I wanted to see the nutritional value.. and since I needed to enter it I thought I'd share it!

I found this recipe in the food section of the newspaper recently. It's one of my new favorites. It is supposed to be inspired by Tahiti. We serve the eggplant over couscous cooked in vegetable broth. Even my kids like it!

A smooth, creamy coconut base envelops bites of both baked and raw cookie - just as if the baker was called away mid-production! Uses my "Double Chip Coconut Drops" recipe (http://recipes.sparkpeople.com/recipe-det

This is a creamy coconut milk based treat that is sugar-free, yet plenty-sweet. I always have a can or two of coconut milk in the fridge, that way if I need to make a quick ice cream or whipped cream I don’t have to wait for the milk to chill. If you’re making this ice cream with room temperature coconut milk, the ice cream mixture will probably need to chill in the fridge for a couple of hours instead of just one.

For those who love coconut, this recipe is the low calorie version of the original recipe.

Mary Ann (that's the one & only from Gilligan's Island)... had a great recipe! Ever wonder where she got all the supplies to keep making those coconut cream pies?! I got this recipe many years ago from the TV guide. it's been a family favorite ever since...usually it's strictly a Christmas treat.

This is a non-dairy vegan option for DIY ice cream. You can add 2 eggs if you wish it to be richer.

I have several bags of plums in my freezer picked from our plum tree last year and am experimenting with ways to use them. I've always loved sour cream pies so decided to try making this as a crustless, custard type desert using granulated Splenda instead of sugar and light sour cream to lower the calories.

A work in progress but still delicious! I have a vegan grandson, so I can change up this recipe for him!
