I LOVE Shrimp Scampi. And I LOVE the lower calorie version that Wildtree nailed with their 'Scampi Blend' Seasoning. So, I decided I would try to make a Cod version as my 5year old does NOT like shrimp.
Like similar scampi recipes, but uses more garlic and Smart Balance instead of butter for a slightly healthier edge.

This is shamefully quick, easy, delicious and very filling. A light and refreshing shrimp scampi that is still very satisfying as a "fancy" main dish. Not my recipe, but I "tweaked" the original a bit and it was so good I had to share it!
