This is a spicy Mexican favorite of mine!
Mildly spicy and full of flavour. Incredibly easy to prepare! The whole family loves it. It made enough for a family of four to eat for two dinners and there was still a bit left over to make tortilla soup. The adults had it on salad dressed with lime juice and salsa, the kids had it in tortillas.
Spicy Mexican Shredded Chicken and Onions cooked low and slow in the crockpot. I cook mine in a very small crockpot that doesnt heat as hot as my large one, so it takes about 10 hours or so. Because I only cook about 10 ounces of chicken breast (enough for a couple of meals for me and then I turn the rest into a pot of mexican soup), it is pretty saucy. You could easily add another 5 ounces of chicken breast to feed a family and still have leftovers.

I accidentally forgot to add the canola oil when I was creating this recipe...surprise, it doesn't even need it!Cooking chicken in coconut milk is a great way to end up with extremely tender chicken. This recipe also takes out the need for any extra sauce...it makes it's own. This is gluten, dairy, and soy free but you'd swear there is creme in the sauce :)

Phew! That was a mouthful. I made the filling for this one night, and it turned out to be so much that I waved off making separate enchiladas and went casserole instead. Pretty easy, very healthy, total crowd-pleaser--even the non-veg/tofu-phobes will dig it.
