I tweeked this to lower the fat content, and using chicken is better then the traditional beef.
This is the perfect soup for a cold day. Low fat with lots of flavor!
Slow cook on the stove stop. Uses all fresh ingredients. Adding this mostly due to it being a family favorite and not many others call for making homemade verde sauce. I also adjust the heat by leaving the seeds and ribs of one half of one jalapeno. Can also add 2 anaheim or poblano chiles for more heat.
2 weeks ago at a dinner party I made the following, compiled from about 4 or 5 different seafood recipes. Due to popular demand I’ve written down more or less what I did (I took notes for once!) and am sharing the recipe here. This is very tasty, rich feeling yet light, and actually pretty darned easy to make. The only annoying part is the white sauce, because white sauce is always annoying. It really means it when recipes say stir constantly (or rather, you darned well better be stirring in the last 30 seconds!) and it just takes forever to thicken.

This is a great comfort food that serves a lot and won't put a huge dent in your daily calories. It's great on a cold snowy day and also good to put in before you leave for work in the morning. Dinner is ready when you walk in the door that night!
