This Sri Lankan combines fresh fruit and vegetables with aromatic spices while being low in fat. As taught in Ayurveda, you can find all four flavors in this curry: Sweet, savory, sour and hot.
chicken breast 500g
white basmati rice 3 cups
tomatoe paste 1/2 cup
patatoes 2 cups
garlic paste
organic ,low fat yougurt 2 cups
ghee 1/2 cup
red chilli,salt,dried plums,turmeric,cinnamon,black pepper,garlic,giner according to taste
1)add meat ,all the spices ,and yogurt and marinate for 3-4 hrs..for best results marinate overnite.
2)fry onions in liitle amount of ghee until golden and add marinated chicken along with tomatoe paste ,stir fry and leave the meat until tender.
3)seperately add 10-12 glasses of water and 3 tbsp of salt in a pan,bring to boil..add rice in it ,when half cook drain them thoroughly
4)spread the cooked meat over the rice,cover the pot and heat until cook.
These are great in a hamburger bun, in pita pockets or for a main meal with vegetables and a mango salsa
Absolutely yummy and so easy to make. The fresh mint gives it such a zing. You gotta try it.
I don't always have the same veggies to add to this basic recipe. Can choose tomatoes, or combination of bell peppers, carrots, celery, or what ever I have on hand. Gets better with marinating time. I freeze the Basil Pesto base & thaw to add to this
I am not a huge fan of tuna but this recipe is sooo yummy, that I will eat tuna!

This recipe uses leftover roasted chicken breasts,grapes, almonds and yogurt with a few tablespoons of Dukes light mayonnaise . Add salt and pepper as you wish.
