I love the original recipe from food network so I modified it to make a bit healthier. I served with blueberry and blackberry balsamic sauce.

This recipe uses mostly egg whites, turkey bacon, and low-fat cheese. It looks like a typical brunch casserole and tastes fantastic, but your guests will never realize that at less than 200 calories per serving it's also guilt-free! It does have some fat, but considering that the original has 40+ grams of fat per serving, this is a huge improvement for a special occasion meal.

This is a recipe I found on the web but called for just brown rice flour and I didn't have any. The GF flour mix made them a bit more pancake-like and puffy but they rolled well and tasted great.
Mix everything together, bake at 400 degrees for 20-25 minutes. Easy peasy.
