This is my regular pasta salad with 6 ounces of pepperoni and romano cheese. Pepperoni adds mostly fat, salt, and a little protein, so feel free to leave it out. I think it adds something extra to the flavor as long as it's consumed in moderation.
Any beans may be used in place of the pinto beans. See the basic pasta salad for a list.
This is a very easy, quick tuna salad. It's my bf's favorite. :-) I think it'd be a good recipe for kids and outdoor parties, too. Especially since it doesn't have icky things like celery.

The only thing I changed was she had 2 teaspoons of salt, I used one and it was good. She said a pound of tomatoes - I didn't really count but put in 8 - looks right.
I love fried mushrooms, but only six can be over 450 calories--and if I have a dip with them, it is higher! So, instead, I "oven fry" and get the same crunch, flavor and enjoyment without all the calories. My "dip" is 3 tablespoons Duke's light mayo with 1 tablespoon yellow or spicy mustard. They don't look as golden and light as fried--but they are just as tasty and crunchy--and 20, with dip, have 366 calories!

This is a typical noon-meal dish found all over Brazil. I make it the way many people do in the Northeast, especially in the state of Ceara. It's a poor man's dish that has been fancied up and served in many restaurants. I like to make it with no meat and serve it on our Meatless Mondays. I'm sharing my simple recipe and adding optional ways at the bottom to spice it up! Sprinkle a little ground cumin for some extra taste and add some chopped fresh cilantro on top before serving!

Hint: Make a double recipe and freeze the remaining burgers for a quick lunch or dinner. Cooking time will be extended...adjust according to your grilling technique~~
I never liked lettuce or any kind of dressing so it took me a long time to like salad. I eat lettuce now, but until then, I had to create yummy alternatives. This salad is filled with healthy (Mediterranean) fats, protein, fiber and nutrients. There is enough moisture from the ingredients that a dressing is not required. However, a balsamic drizzle is a de-lish addition if desired.
Lovely as a light lunch and pleasing to the (dairy friendly) vegetarian. When recipe is doubled, it's perfect for potlucks and picnics since there is no dressing.
These are great as a side dish or main course! I love them as in between meal snacks as they are satisfying and filling. Everyone raves about this dish when I serve it!
This is super easy blueberry dessert I learned from my sister-in-law who learned it from a friend of hers. They call simply call it "blueberry stuff". It is great for summer cookouts or picnics. I've also experimented by substituting the blueberries with strawberry pie filling, peaches, and apples. All were good, but everyone agrees blueberry is the best.
mix light sour cream, splenda, vinegar and may together. Peel and slice cucumbers and peel and slice onions. Pour sauce over and refrigerate for four hours.
