Chia seeds are supposed to be one of nature's super foods with 3100 mg of Omega-3 and 1050mg of Omega-6 and high in dietary fiber. They are recommended for diabetics. Although I am not diabetic, I use diabetic recipes for great low-carb choices. This recipe is modified from a dlife recipe. I only use Alaska wild caught salmon, and I drain it and remove the skin pieces so the numbers I've put in may not be totally accurate.
This is an old family recipe. My grandma used to make it and it is the best sauce I have ever had. No restaurant or bottled sauce will ever compare. The sauce takes a long time to cook but it freezes very well. I break mine down into family meal size tupperware and freeze for a quick, easy, homemade meal, pull it out of the freezer to thaw before you leave for work.
I serve this with my Greek chicken recipe. My children fight over these potatoes, hence the large quantity.

This is a go-to meal starter for me, when I've forgotten to plan for dinner, I will serve this as one of those meals above. I use the chicken breast tenderloins, put them in the pan frozen, cover and turn the eye on really low to let them quick-thaw.
Use the amount of seasoning and water your taco seasoning calls for for one pound of meat, if you like your meat spicier add more seasoning (adjust the water accordingly) or add a second can of rotel or a can of diced green chilis.

Using no canned ingredients, this Chili recipe is great for those on a low sodium diet. Delicious on a bed of lettuce with a tbsp of sour cream and a little picante sauce.
This is a combo of my Chicken Pot Pie filling and my mother in-law's Biscuit Style Crust. They go together fabulously. This is awesome with a double crust, but if you are watching your fat intake, it is also yummy with just a top crust. Also, the homemade gravy is wonderful, but if you have leftover gravy or prefer to use canned or jarred, this is even easier. Enjoy!

Very filling super delicious, and SPICY!! You can tone down the spiciness by substituting plain Diced Tomatoes instead of ones with Green Chilies as I do.
