This is a recipe I photo copied out of a cookbook a while ago, I changed a few things and get asked for the recipe everytime I serve it to others.
A delicious and nutritious dinner for one. I cook my rice in a rice cooker before starting dinner. I really enjoy this when I'm looking to put a bunch of nutrients into my body. I'm always full and satisfied after this meal.

Cubans love pork, “The other white meat”. To me there is no better way than to grill them and top them with some sauteed onions and a squeeze of lime juice. The traditional version calls for the pork chops to be sautéed on a skillet with some oil. To make them healthier, I grill my pork chops.

heat oil and cook onions until quite well cooked, add leeks part way through over medium-low heat (approx 10 minutes full cook time). Add everything else and simmer for 45-60 minutes until everything is cooked.

Yes, you CAN still have pancakes with a dairy/egg allergy! I found this recipe on a blog and the entire family gave it a thumbs-up. We added blueberries for the husband, chocolate chips for the kids (who can eat dairy), and I enjoyed them just the way they are.
