I've always had a taste bud defect of only liking creamy soups. Thankfully, fat free half & half adds creaminess just as well as heavy cream.
Cheating, using bottled peanut sauce. Still yummy, though!

I love broccoli crunch salad, but have loathed the 400 calories per cup of some of my favorites. I've tried multiple times unsuccessfully to create a healthier version that still tastes like my favorite and that helps me enjoy eating these cruciferous powerhouses without the payback. I think I have finally got it.
Kudos to LIBRARYCAT for the initial recipe I found on Sparkrecipes that led me in the right direction. I still wanted something with less calories and sugars. . .and a bigger portion.

Got this from pg 256 of Vegan Living (complete idiot's guide to) book. But, like any good salad you can make this one your own by tweeking the recipe. All appropriate credit to them but I wanted to add it here for anyone else eating vegan. I hope that's ok. Great for picnics or other occassions where you might normally have egg salad. My first shared recipe. Enjoy.

Submitted by 60SIXTYThis reminds me of tuna salad because of the mayo and celery. It's a good sandwich filling for vegetarians or those trying to get more beans into their diet. To make it vegan, just use Veganaise for the mayo.

A tasty and very lean twist on classic comfort food. A lot like a Shake-n-Bake, only without all the weird ingredients. Low carb, Low fat, High taste! Uses no prefabricated ingredients other than old-fashioned bread.
Great source of potassium, B vitamins, and selenium.
These are more cake like so I don't consider them breakfast food. They are also higher in calories.

Submitted by OILPAINTERI love curry, and I love egg salad. I mashed em together. Voila. This is VERY heavy on curry. If you like less seasoning, you might wish to cut all the spice amounts in half. Or, you can vary them to your liking. This is a tough one to mess up!
