Sweet potatoes are a Thanksgiving staple, but I can't tolerate another year of mushy, sticky, marshmallow covered grease. Those vitamin A delivering darlings deserve better than that! So last year, I converted a family favorite into friendlier fare. And it's vegan to boot. (No, the meat-itarians didn't notice either). How about them apples!?
I love this dressing becase it is simple and always fresh. The avocado gives me healthy monounsaturated fat, and the variety of spices and vinegar choices give me a thousand different combinations. Every salad is a new adventure.
I have combined a few recipes I like, trying to find a vegan breakfast muffin. This one turned out to be too high in calories - but it does make a pretty big muffin. Very yummy & filling.
Thinly sliced red cabbage, carrots and jicama are complemented by the sweetness of seasoned rice vinegar, grapefruit and glazed pecans. Cilantro adds a punch of flavor.
I am not vegan, trust me, and when my vegan coworker brought these in I was skeptical. But man are they delicious! I edited the recipe a little (using applesauce instead of oil and almond milk instead of hazelnut) so feel free to amend. It is also easy to make gluten free!
