Easy, yummy and nutritious. You can trade any kind of beans to change this recipe up. I added the refried beans in it to make it a thick hearty soup.
I got this recipe from Weight Watchers. It's high in protein thanks to the beans. But pair it with a piece of whole wheat bread to make a complete protein.
Quick and easy. Make sure you use real peanut butter (ground peanuts, that's it), and limit the salt in the broth and chickpeas.
ate these in Puerto Rico on our honeymoon almost every day they were so delicious. I keep trying to find the right recipe to duplicate them... this looks like it will be close!

My sister, Chris, came to my house and made this one cold winter day. It was wonderfully simple, nutritious and delicious!
I have finally perfected my banana muffins! These are delicious and moist with just a hint of chocolate flavor. The instant espresso powder in this may seem like a strange addition, but it is there to heighten the chocolate flavor and doesn't impart any coffee taste. The strawberries give little bursts of sweetness and leaving some chunks in the bananas brings out the banana flavor. Make sure to use previously frozen bananas OR very ripe ones-- you will have to put a LOT more sugar in to counteract a green or yellow banana in this recipe, which only calls for a quarter cup.
I was introduced to dandelion greens by my CSA. This weekend while doing some early spring weeding, I just couldn't resist. So I looked at Julia Child's Spinach Quiche recipe and the recipe for a Chard Tart that I'd made last summer and improvised. We used handmade butter crust, following Julia's recipe but for ease, the nutritional info is calculated using the Sparkpeople pie crust. I'm sure there are ways to shave a few calories by using lower fat dairy and egg substitute, but that's not how I cook. And if you aren't brave enough to try dandelions, I'm sure it would be yummy with spinach, chard or turnip greens.
This can be cooked on the stove or in a crock pot. It's delicious served over brown rice or basmati rice.
Very good as a dip on its own. Adding a 1/4 to a 1/2 of tomato to the mix may be good as well. Cilantro may also be a good herb to try instead of the sage, or be daring and try both!
