This is a favorite recipe I found in a magazine but I "play" with the ingredients. You can lighten the recipe with light cream cheese and yogurt, use splenda, part whole wheat flour, and use part apple sauce for the oil - but here is the recipe in its original form. Very pretty and satisfying too! Note that it is best made the night before you want to eat it!

These are super tasty cookies! While the recipe calls for raisins, if I'm in the mood for chocolate, I'll substitute the raisins with chocolate chips!
I found this recipe in the Kraft food & family Holiday 2009 magazine. The original recipe had 190 calories and 9 grams of fat. I entered this recipe into the recipe calculator to see if I could make it less "fatty" by substituting the cream cheese with fat free cream cheese and the vanilla pudding with sugar free, fat free vanilla pudding. I also substituted the original canned pumpkin for no salt added canned pumpkin. This is one of those must have recipes for chocoholics trying not to cheat. It is quick, easy and wonderfully creamy. It's great for diabetics as well. My kids can make this recipe with little help from Mom. They don't even know that it is good for them. Wow!
This recipe was adapted from one of my mother-in-laws family’s favorite recipe. I only substitutes applesauce for the oil. It makes a deliciously moist apple cake.

This makes a lovely bundt cake that is a great dessert to share. It's great as is, or you can serve w/ a bit of whipped topping, sorbet, or a fruit sauce would also be light and good. For those not used to the ginger, it can add a bit of a kick, but my family loves the flavor. If you can find crystallized ginger in bulk bins near you, you will save a bundle. The toughest part is grating the ginger-- otherwise the cake comes together fairly easily. I tried this recipe as is the first time, but I imagine you could cut the butter in half and sub in some applesauce without massively compromising texture.
