This can be a breakfast or dinner meal. This is made with leftover baked potatoes.
I ate this in Europe, but it doesn't seem very popular in the U.S. even though it is delicious. This is a vegetarian version without the bacon.
You can divide this loaf in two halves and serve one hot; then serve the other cold for another meal. I have also frozen the second half before cooking for another dinner.
This is an indulgance, but save up the calories and enjoy! It is a whole meal in one pan.
Serve with whole wheat spaghetti/pasta. I usually do an OAMC type cooking, making a bulk batch of this in my crockpot. However, I also make it on the stove sometimes.
